My newest obsession has got to be fresh figs.

When I was young, I could eat an entire package of Fig Newtons on my own, although I could easily say that about nearly any type of cookie. While I’m all too familiar with those popular cookies and with dried figs, I can’t recall a single time when I ate fresh figs before a couple of weeks ago.

Woohoo!!

I’m so excited to officially be on Summer Break (well, at least until my Summer courses begin in June)! This is definitely cause for celebration, and what better way to celebrate than with dessert?!

I’ve had this Raw Vanilla Cheesecake with Rhubarb and Blood Orange Compote on my mind for weeks now, but I haven’t been able to find the time to come up with the recipe. As soon as I was done with finals, I finally decided that it was time to work on this recipe–and I’m so glad I did!

Simple Quinoa Porridge

I just love when it snows in Dallas!! It’s a rare occasion, but when it does happen, I turn into an excited little kid who can hardly wait to throw on my boots and heavy winter coat so that I can run outside to build snowmen and make snow angels. Ok, so we usually don’t get enough snow for that, but I try my hardest to make it work!

Personal Pumpkin Pie (Vegan, GF, Almost Raw)

Honestly, what would Thanksgiving be without pumpkin pie?!

Pumpkin pie has become the quintessential fall dessert and a necessary–yes, necessary–component of Thanksgiving dinner. Simple, slightly sweet, and bursting with fall flavor–it’s the perfect ending to a decadent feast and it seems to wrap everything up in a nice, neat bow.

For some time now I’ve been wanting to make a Personal Pumpkin Pie. You see, I’m the type of person who eats an entire pie when there’s one sitting right in front of me. Basically, I have no self-control, especially when it comes to dessert. So, if I make smaller, personal-sized desserts, I’m (sometimes) able to avoid grossly overeating. My favorite mini dessert comes in the form of pie. I’ve shared quite a few mini pies on Almonds & Avocados in the past: Mini Raw Cacao-liscious Pies, Mini Raw Key Lime Pies, Banana Coconut Cream Pies, and Raw Coconut Cream Pies. Though these pies are “mini” versions, they’re actually quite large and filling. And what do all of these pies have in common? They’re all raw, and each one is dairy-free, gluten-free, and refined-sugar-free. They’re also full of flavor! YAY for healthy, delicious desserts!

Vegan Vanilla Birthday Breakfast Shake

Yesterday was my birthday and I had the most fantastic day!!

How can your day go wrong though when it begins with a thick, smooth, delicious, and nutritious Vegan Vanilla Shake?

20121109-235711.jpgExcept I added so much whipped cream that the shake actually did go over the top and started to overflow the sides of the glass! Not to worry, I cleaned licked up the mess. After adding whipped cream, I just felt as though something else was missing = chocolate chips, of course! So, I basically ended up having a drinkable sundae for breakfast. Awesome. Continue reading
