Vegan Sweet Potato Bisque

Well hello my long-lost friends!!

I can’t stand that it’s been so long since my last post!! To be perfectly honest though, I needed to take a break. The past month, all of my free time has been consumed by the typical holiday madness, a much-needed trip to see my family, doctors appointments, an unexpected surgery (with another one in just a few days), and getting back into my regular routine.  As I finally (and stubbornly) came to realize about a month ago, I had been burning the candle at both ends and my body was begging me to slow down and relax. A small hiatus was a must.

White Bean and Tomatillo Chili and WIAW

Welcome back for another ‘What I Ate Wednesday’!

Yesterday was my fist day back in class after a long winter break. I’m pretty surprised by how excited I was to return to school. I never in a million years thought that I would utter the words “excited” and “school” in the same sentence, but it’s true–I actually wanted to go back!

Vegetarian Lentil Soup

20130119-233511.jpg My hubby buys vegetarian lentil soup nearly every time we go to the grocery store. I was shocked the first time he brought home a big tub of the soup–my hubby, the meat-eater, enjoying a vegetarian dish?!? (I can’t tell you how much it thrills me that he loves a food we can both eat!!) Unfortunately, there is a down-side: what doesn’t thrill me about this scenario is how quickly those gigantic tubs can add up. One tub = 1, maybe 2, servings for him, and each tub costs around $8. That’s a pretty hefty price tag for something that often constitutes just a snack or only a portion of his lunch or dinner.

Don’t get me wrong, I’ve tried to recreate his favorite soup a couple of times. Both times, however, no matter how much I seasoned, the soups turned out bland and tasted merely “OK.” Despite my past failures, my hubby has continued to ask me to try again. I’ve wanted to, but my ego has kept me from agreeing with him–what if I fail yet again?? Finally, after months of badgering, I caved. Fortunately for me, the third time really is a charm :)

Thai Rice Noodle and Veggie Bowls (can also be served as soup)

What an amazing weekend! I took a nap on Saturday and on Sunday, my stepson and I finally decorated the Christmas tree and then watched Elf (one of my favorite Christmas movies), and, above all else, I enjoyed some much-needed time with dear friends and family. Weekends like that remind me just how blessed I really am.
