Happy Earth Day everyone!

Earth day, the largest secular and international holiday, is a time to celebrate our wonderful planet and to promote a universal community devoted to nurturing–rather than exploiting–our great Earth. As my grandpa used to say, “Never leave the campsite dirtier than you found it.” If we want to protect our Earth for the future generations that will inhabit it, we better start cleaning up our campsites!

Chocolate Caramel Popcorn–A vegan and gluten-free treat!

It’s no secret to those who know me that I have an unhealthy relationship with popcorn–unhealthy in that I find myself giving in to popcorn cravings on a more-than-regular basis (think multiple times each week and sometimes more than once in a day), and then once I begin eating it, I don’t know when to stop. To be perfectly honest, I actually do know when I’ve had too much popcorn, but I keep eating it anyway until I feel as though I’ll burst if I eat just one more teensy-weensy kernel….

Nutella, Banana, and Brownie Parfait (aka, My new favorite dessert)

I’d like to introduce you to my new favorite dessert: meet the Nutella, Banana, and Brownie Parfait. I can already tell you’re going to get along great!

I usually get my inspiration for recipes from very random places. Lately, I’ve been all about Instagram (you can follow me at almondsandavocados). There are so many amazingly creative people on Instagram posting the most enticing pictures of their edible creations. Recently, I saw a picture of a beautiful peanut butter parfait that I desperately wanted to recreate. Unfortunately, I was all out of nut butters and too poor to run to the store and buy the ingredients I would need to make more. I sulked around for a while and eventually decided that the parfait would have to wait.

It wasn’t until I was searching through the jars that clutter my kitchen counter a couple of days later and stumbled upon my forgotten jar of hazelnuts that I remembered that parfait. I quickly whipped up a batch of Healthy Nutella and set to work! Since I love the combination of bananas and Nutella and have been on a raw brownie kick lately, it didn’t take me long to realize that this amazing combination would make a crazy-good dessert!
