The past couple of weeks (the last couple of months, really) have been hectic with parent-teacher conferences, my brother coming in town, and weddings. As much as I’ve loved working with my kinder class and spending time with friends and family, I’ve also really missed y’all! In fact, I’m positive that this recent lengthy absence is the longest I’ve ever been away from A&A. Never again, I say!
With Halloween merely a few days away, I thought it would be the perfect time to break my silence and share some of my favorite ideas for healthier alternatives to the typical overly-processed and sugar-laden holiday treats–especially since I LOVE Halloween. It’s not exactly Halloween that I love per se, but the fact that it kicks off the entire holiday season! I’ve already begun craving warming foods and lots of sweets. So if you haven’t already noticed, I’m a lover of all things quinoa. And chocolate (but honestly, aside from my stepson, who isn’t a chocolate-lover?). It may be hard to believe, but I love them both equally. Quinoa is so versatile and is an amazingly healthy alternative to wheat products. Chocolate is, well, chocolate. Basically, it’s inherently perfect. Anytime I can come up with an excuse to combine these two loves, I’m always game to try. Have you seen the GEICO “Happier-than-a-camel-on-hump-day” commercial? If not, please search for it on YouTube ASAP. I LOVE that commercial. I can’t help but smile every time I see it, and each Wednesday I annoyingly say to my coworkers, “Mike, Mike, Mike…What day is it? Hump Daaaaay.”
The past two Wednesdays, I’ve made these delicious Sweet Potato Brownies to reward myself for making it through the first half of the week and to power myself through to the weekend. The first batch was good, but I changed up the recipe the second time around and I’m so glad I did because these brownies are INSANE.
It’s been a while since I last made a truly rich, decadent, and over-the-top dessert. Because I can’t seem to go to bed before having something sweet, my nightly ritual lately has consisted of sliced bananas, shredded coconut, cacao nibs, and walnuts or almonds. What can I say, it’s easy and makes for a nice quick fix.
