Do you ever experience overwhelming cravings for a particular food–cravings so strong that you have no other option but to cave in and satisfy the crippling urges? I know I do, and when the cravings are that strong they are typically spurred by something drizzled with chocolate, something coated in chocolate, chocolate-flavored something, or just plain ol’ chocolate.
I can already tell these little devils will be the death of me.
It’s no secret that I have a major issue with restraint, particularly in the realm of chocolate. But when you combine chocolate, caramel, and pecans, I lose all control.
Many years ago–long before I gave up dairy and when I still had a killer metabolism–I worked at an ice cream shop. My favorite item on the menu was the turtle sundae, which consisted of vanilla ice cream and a mixture of chocolate sauce, caramel, and chopped pecans drizzled on top. I always loved when customers would order that sundae because I could accidentally (wink, wink) make an abundance of the topping and
eat inhale the leftovers.
I’m not sure what it was that recently reminded me of that topping, but once the craving for a turtle-sundae-like dessert struck, I had to come up with something immediately.
You’re going to have to trust me on this one: drop everything you’re doing right this instant and go make yourself some of this Healthy Nutella.

Ahhh. For the first time in weeks, I’ve actually had a little time to relax! Between being sick (which is always inconvenient and frustrating), school, and work, I feel like it’s been a while since I had quality “me” time. I believe it’s so important for everyone to take some personal time to do what they enjoy, to relax, and to appreciate the finer things in life. I’ve noticed that whenever I’m unable to have my “me” time, other areas of my life begin to suffer as a result.
Yesterday, after getting up early to go buy groceries, I thought to myself, “what am I doing?” I got back into my PJs, climbed back into bed with my hubs, and we watched football for hours. I don’t know that there’s anything I could have enjoyed more than curling up under the covers next to my best friend on a chilly day and simply relaxing. I even nodded off for a while and I don’t have any clue how long I napped because, for once, I didn’t have to watch the clock and budget my time. Afterward, I got up and played around in the kitchen. I made some new fun food, took a few pictures for the bloggy-blog, and ate more food than any one human being should eat in one day. To say that my Sunday was perfect would be an understatement. It was one of the best days I’ve had in a while, and I really didn’t do much of anything. Perfect.

That’s right, it’s Friday and life is good. To make things even better, I’m eating a homemade chocolate bar. Yep, for breakfast. But it’s Friday so it’s OK. Besides, I really needed this chocolate.
This past week has been nuts. Between school, work, getting sick and completely losing my voice for two whole days, and everything else that just so happened to occur all in the same week, I haven’t had any time to really relax–or to eat dessert, which is just a crime.
Then a miraculous thing happened yesterday: while I was typing up a paper between classes, a knock came at the front door and I could hear a “plop” as something was dropped to the ground. Could it be?! My long-awaited package had arrived! I was so happy that I burst through the door, grabbed my package, and hurried inside to tear it open and marvel at my new goodies….
